‘Virga Morada’ means purple rain that never hits the ground. The deep, rich magenta colors of this wine are derived from Chenoa’s family vineyard. Old vine, dry-farmed and planted by the hands of Justine and Stephen Ashton, these grape skins were up-cycled and used for our apple + grape co-ferment.
Organic Gravenstein juice from our buddies Bardos Cider in Occidental, CA started spontaneous fermentation on native yeasts in stainless tank for 10 days. It was then gravity fed into an open top fermentor with fresh pressed Syrah skins and fermented Pinot Noir skins from the Ashton Family Vineyard (Sonoma Valley). It co-fermented for 13 days, then was bottled under cap at 1.5 brix.
No additions or subtractions. Unfined, unfiltered, zero SO2.
