¡Sidra! was made under the first harvest moon (Corn Moon) on September 2, 2020 in the Valley of the Moon.

Organic apple juice from Occidental, CA started spontaneous fermentation on native yeasts in neutral French oak barrels for 8 days. At 2.5 brix the juice was pumped into an open top bin and freshly pressed skins of Carignan and Viognier grapes were added. The juice and skins co-fermented for an additional 4 days. Bottled at 1.5 brix.

No additions or subtractions. Unfined, unfiltered, zero SO2.
