Syrah and Mourvedre were crushed and cold soaked for 6 hours, then were pressed into a stainless steel tank. Co-fermented for two weeks in stainless, then racked to French neutral oak and aged on Sonoma Coast ocean stones for 8 months. Racked off the gross lees on December 31st 2021. 5 gallons of 2020 Carignan (Testa Vineyard) was added two weeks before bottling.
No additions or subtractions. Unfined, unfiltered, zero SO2.
