Syrah was ¾ whole cluster and the rest destemmed into an open top fermenter, the Carignan was direct pressed on top to float the Syrah, two weeks fermented on the skins with gentle hand punchdowns then pressed into French neutral oak to age for 10 months. Racked once.
No additions or subtractions. Unfined, unfiltered, zero SO2.
